Naples: Where Nonna's Heart Lies

Naples, often referred to as the soul of southern Italian cuisine, is renowned for its bold and vibrant flavors. Here, culinary traditions are rooted in simplicity and the use of fresh, local ingredients. Naples is celebrated as the birthplace of the world-famous Neapolitan pizza—a culinary masterpiece with a thin, airy crust, San Marzano tomato sauce, fresh mozzarella, and basil leaves.

Nonna has fond memories of the bustling pizzerias of Naples and the tantalizing aromas that filled the air as pizza dough was expertly tossed and baked in wood-fired ovens. She would often share stories of savoring slices of Pizza Margherita with Pa, a classic adorned with tomatoes, mozzarella, and basil, named in honor of Queen Margherita of Savoy. Nonna's kitchen reflected the flavors of her beloved Naples, where she prepared pasta dishes like Spaghetti alla Puttanesca, a delightful combination of tomatoes, olives, capers, garlic, and chili flakes.

The coastal areas near Naples also inspired Nonna's love for seafood, and she often delighted us with Linguine alle Vongole (linguine with clams) and Scialatielli ai Frutti di Mare (seafood pasta). Every trip to the local market, much like the Mercato di Porta Nolana in Naples, was an adventure of vibrant colors and the freshest produce—a reminder of the strong bond between Nonna and her homeland.

Tortorici, Italy: Pa's Culinary Legacy

Tortorici, a picturesque village nestled in the Sicilian mountains, offers a distinctly different Italian culinary experience. Here, traditions are deeply cherished, and recipes have been lovingly passed down through generations. The flavors of Tortorici are influenced by the region's agricultural heritage, with a focus on hearty grains, vegetables, and olives.

One of Pa's favorite dishes from Tortorici was Pasta con le Sarde, a flavorful pasta creation featuring sautéed sardines, fennel, pine nuts, raisins, and breadcrumbs. This harmonious blend of sweet and savory flavors captures the essence of Sicilian cuisine. Pa also introduced us to the joy of Arancini, deep-fried rice balls filled with various delicious surprises—a delightful treat that embodies the spirit of Sicily.

Sicilian desserts hold a special place in Pa's heart, and he often shared his love for Cannoli, Cassata, and Torrone. These sweet creations, with their use of ricotta cheese, candied fruits, and nuts, showcased the sweeter side of Sicilian culinary traditions.

Pa's roots in Tortorici have left an indelible mark on the flavors of Galati's Restaurant, where we strive to preserve the authentic taste of Italy. Our recipes are a tribute to the culinary legacy of both Naples and Tortorici, blending the best of both worlds to create our beloved Italian pasta sauces and spice blends.

Incorporating the culinary traditions of Naples and Tortorici into our menu adds depth and diversity to the flavors we offer. It allows us to share the essence of these two distinct Italian regions with you, and we are honored to do so. Pa and Nonna's influence is at the heart of everything we create, ensuring that every meal at Galati's Restaurant is a celebration of family, tradition, and the rich tapestry of Italian cuisine.
